Made in Brasil's Moqueca

Moqueca is A Classic from Bahia, mixed seafood and fish stew made with sweet peppers and coconut milk served with steamed rice. The etymology of the word moqueca traces it back to an African word mu'keka meaning "fish chowder" or "fish stew" as the first moquecas used fish as their principal ingredient and that other variations followed. So to begin with the beginning, here's a recipe for mixed seafood and fish moqueca that comes from Bahia.

INGREDIENTS:

  • 2 table spoons of palm oil
  • 2 finely chopped onions
  • 3-4 garlic cloves crushed
  • 1 Red and 1 Yellow Pepper chopped in quarters
  • 1 table spoon of sugar
  • 400ml of chopped tomatoes (can)
  • 4 fresh chopped tomatoes
  • 400ml of coconut milk
  • 800grams of mixed seafood or fish (white fish, prawns, squid, mussels, clams, etc)
  • Coriander – quantity depends on preference
  • 1 teaspoon of grown pepper
  • Salt

 

COOKING:

Chop the tomatoes and the peppers in quarters and cut out the seeds.

Stir fry the onion, crushed garlic with the palm oil until golden.

Add the chopped tomatoes, fresh tomato and pepper slices and sugar to the pan. Add up to 500ml of water and let it simmer for 15-20 minutes. Blend all this with coconut milk and the coriander.

Add preferred seafood/ fish to the sauce and cook until done.

SUGGESTION:  as a side dish try white basmati rice
